- Picar el resto de la cebolla, pimiento morrón y la calabacita rebanar en discos semigruesos y después en bastones. En una cazuela poner aceite para acitronar la cebolla y el pimiento, ya que estén se agrega la quinoa y un poco de pimienta.
- Agregar las calabazas, darles unas vueltas y agregar los elotes con todo y el caldo, si no es suficiente líquido agregar agua, rectificar si es necesario agregar un poco de sal o sazonador de pollo o verduras y dejar que se cueza todo.
